Momma Mia That's a Good Pizza

Tonight Jake decided to cook his world famous home made pizza for dinner. Usually, he would just run out to a pizza joint and pick up a pie, but it was cold out tonight that he decided it was actually easier to just make it himself. It must have been pretty good because everyone came back for seconds and thirds. The dough was mixed in the Bread Machine, but you could probably make the same recipe by hand.

Here is the Recipe

Ingredients:
  • 4 Cups Flour
  • 2 tsp. active dry yeast
  • 3/4 tsp salt
  • 3/4 tsp sugar
  • 1-3/8 Cups water
  • 3 Tbsp. Margarine
  • Sauce
  • Cheese
  • Pepperoni
  • Oregano
  • Garlic Salt
Directions:

Mix the Flour, yeast, salt, sugar, water and margarine and let rise for two hours. Knead several times and allow to rise. Spread dough on pizza platter. Add toppings and cook for 15 minutes at 450 degrees. Enjoy!

Caramel Apples

Nothing says Fall like caramel apples. Scribbles and her friend Caramelina decided to whip up a batch of Caramel Apples. They were quite yummy.

Makes:
5 servings
What You Need
5 medium apples, washed, well dried
1 bag (14 oz.) KRAFT Caramels (about 50)
2 Tbsp. water
Make It

INSERT wooden pop sticks (from bag of caramels) into stem end of each apple. Cover large plate with waxed paper; grease paper with butter. Set aside.

PLACE caramels in large saucepan. Add water; cook on medium-low heat until caramels are completely melted, stirring constantly.

DIP apples into melted caramel until evenly coated, spooning caramel over apples if necessary. Allow excess caramel to drip off. Scrape bottoms of apples, then place on prepared plate. Refrigerate at least 1 hour or until ready to serve. Remove from refrigerator and let stand at room temperature 15 min. before serving. Store leftovers in refrigerator.

Wash and dry apples thoroughly so that caramel adheres to the apple peel.

Homemade Macaroni and Cheese Recipe

Tonight, our chef in training Sarah prepared an old family favorite. We call it Dad's Mac and Cheese. Jake swears that the recipe is a secret. What that really means is that he has been too lazy to write his recipe down and just throws whatever he wants into a pot without measuring. Sarah though actually went to the trouble to write down the ingredients as she was preparing this easy but tasty dish.

Ingredients:
  • 3/4 Cup Milk
  • 3 Tbl Butter
  • 1 handful of flour
  • 1 pinch of garlic salt
  • 1 small onion chopped (Optional)
  • 2 cups shredded cheddar cheese
  • 1 lb dry elbow macaroni pasta
Directions:
  • Cook Pasta
  • In a sauce pan, melt butter
  • Reduce onion
  • Add flour
  • Add Milk
  • Add Cheese
  • Slowly melt cheese stirring often.
  • Combine Pasta and Cheese Mixture
  • Enjoy!

Cheesy Baked Ziti Recipe

Today, our chef in training Sarah prepared a lovely Baked Ziti for us. She was apparently assisted by her friend Alayna who was monkeying around in the kitchen.

Cheesy Baked Ziti Recipe

Ingredients:
  • 1/2 pound dried ziti
  • 16 ounces of ricotta cheese (part skim)
  • 3 cups shredded mozzarella cheese
  • 3 cups of spaghetti sauce
  • 1/2 cup Parmesan cheese
Directions:
  • Heat oven to 350 degrees.
  • Bring a large pot of salted water to boil
  • Add ziti to boiling water
  • Cook until tender (about 8 minutes)
  • Drain pasta
  • Place ziti in large bowl
  • Mix ziti with ricotta and half of the mozzarella
  • Spread half of the spaghetti sauce on the bottom of the pan.
  • Add the ziti mixture
  • Cover with the remaining sauce
  • Sprinkle with Parmesan and the remaining mozzarella
  • Bake uncovered for 20 to 30 minutes until the casserole bubbles on the edges
  • Enjoy!

Potato Peanut Butter Candy Recipe

Here is a great recipe from the old country. We aren't sure which old country, but it was passed down from Molly's Mother who grew up in the Reading, Pennsylvania area.

This candy is easy to make and will really hit the spot if you have a sweet tooth.

Ingredients
  • 1 sm. potato, boiled & peeled
  • 1-2 lb. pkg. confectioners' sugar
  • Peanut butter
Directions
  • Mash potato and start adding the confectioners' sugar.
  • The potato will become almost liquid.
  • Keep adding confectioners' sugar until firm enough to make a large ball.
  • Roll mixture on a pastry sheet.
  • Spread with peanut butter.
  • More confectioners' sugar may be added to keep it from sticking to the rolling pin.
  • Then, roll up as a jelly roll.
  • Refrigerate for 1 hour and slice in thin pieces.

Potato Casserole Recipe

Sarah decided that she would prepare dinner for us this evening and she came up with a lovely little dish. She calls her creation Potato Casserole a la Sarah. We all gave it a thumbs up. In case you would like to try it yourself, here is the recipe:

Ingredients:
  • 32 ounce bag of tator tots
  • 4 tablespoons of butter
  • 1 cup chopped onion
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 pound diced ham
  • 1/4 cup flour
  • 3 cups milk
  • 3 cups shredded cheddar cheese
Directions:
  • Preheat oven to 425 degrees F.
  • Bake tots for 1/2 hour until golden brown then remove dish from oven.
  • Reduce oven to 375 degrees F.
  • In sauce pan, melt butter.
  • Add onion, salt and pepper and cook until soft. (4 minutes)
  • Add ham.
  • Add flour.
  • Add milk and bring to boil.
  • Remove sauce pan from heat.
  • Add 2 cups cheese and stir.
  • Pour the milk mixture over the tots and sprinkle with remaining cheese.
  • Bake in oven until bubbly and golden brown. (About 35 minutes)
